HACCP

HACCP (Hazard Analysis and Critical Control Points) is a self-monitoring system that every operator in the food production and handling sector must implement in order to evaluate and estimate hazards and risks, and establish control measures to prevent hygiene and health issues. Italian law makes HACCP mandatory for all food sector operators. EON Impresa offers a fully integrated technical consulting service for the drafting of the HACCP self-monitoring document.

The person responsible — either the business owner or a specifically delegated person — must:

  • Analyze potential risks to food products
  • Identify points where food risks may occur

  • Identify and apply control and monitoring procedures for critical points
  • Carry out periodic control analyses
  • Periodically review risk analyses, critical points, and control procedures whenever processes or activity types change
  • Draft a document highlighting all of the above points
  • Train and inform food handling staff on food hygiene in relation to the type of activity
